(Christmas) Coffee Chats ~ Vol. 5


If we were having coffee this week, I'd be in a better mood than the last time we had coffee, thats for sure. Life is good these days and its the Christmas season!!! For the past month Ive been busy with work (when am I not) as I'm trying to prep all I can before I leave for my trip next week. Speaking of trip, I'm all ready! I have all my winter gear prepped, and this weekend I bought two new jeans (fun fact - I don't wear jeans). I'd say I'm as prepped as I'll ever be for the cold and for a wintery Christmas #jazzhands #soready.

In wedding news, planning is going great (though I'm still not a fan of the planning process). Just this last weekend my bridesmaids dresses were chosen, my invitations were ordered and I also made a few other big decisions that I was dragging my feet on. Finally getting shit done over here.

Anyway, since I've traveled quite a bit in the past, and have been traveling even more lately (at the end of this year I would have been to four countries!!), I have become quite familiar with travel apps. Over time, I've narrowed down the best travel apps - or at least those that make my travels much easier.

I saw this tree over the weekend and fell completely in love with the decorations. So cute. December is almost a week old and most people are done with their shopping lists, so I'm probably a little late to the game here, but since I am notoriously a late shopper (I haven't finished my list yet) its not really surprising that I'm just now putting up my wish list. 

Lately, I've been watching what I spend very closely since our expenses in the next year are quite a lot (read: wedding), so my wish list isn't very long and frankly most of these are wants and not needs.

Making the most of the weekend

December 1st! I truly believe this year flew by. I swear it was just January. Anyway, its really starting to feel like Christmas now. I still haven't played any Christmas music and my apartment is not decorated (I travel in 2 weeks and won't be back until January so I'm not sure it will be), but I feel Christmas in the air.

You know what else I'm feeling? The weekend. I was having a chat with a friend this week and she mentioned that she had no clue what to do with this weekend and said that she was bored most weekends. #WUT 

This isn't the first time I've heard this comment (esp in my field of work where everyone thinks work should be 24/7) but I for one fully believe in weekends. Sure, I work some weekends, but lately my weekends have been for me to be the me I was before the career and adulting. There are so many ways to make the most of the weekend. I rattled off a bunch of options for her and the thought occurred to me - I should share this.

Winter Travel must haves ~ what I purchased

It's no secret at this point that in a couple weeks I'll be heading off to Romania (and Germany). I may have never seen snow, but I certainly have experienced winter. On my last trip to Europe in January 2012 or so, the temps got down to about -5 (celsius). Pretty cold, at least to me. While that was a while ago, I do remember I was less than prepared for the cold (and the wind!!!) so for this trip, I'm determined to be as prepared as possible.

A couple weeks back I hopped online and binge shopped for all my winter travel essentials (since I basically have none). On my list were jackets, boots, gloves, scarves, pjs and clothes. Now while its a three week trip, I was conscious of two main things - I didn't want to spend too much since I won't need them again for quite some time (we do plan to visit Europe again in the winter but I clearly don't live in four season country) and they needed to be able to comfortably fit in my suitcase. I think I succeeded in getting everything I needed, at a reasonably cost, and it all fits!

Recipe ~ Romanian Mici

This recipe was a labour of love. Literally. 

Im a Caribbean girl with a Romanian fiancé. To say thats uncommon would be an understatement (though we have met other like couples purely by chance). Anyway, navigating an intercultural relationship has its unique blessings, one of them being getting an opportunity for both of us to try new (to us) foods. Since we met, Danny has been waxing poetic about this Romian dish called Mici (pronounced meech) and I have been determined to try it. I mean, I may not be able to speak much Romanian language, but food is a universal language. 

Full disclosure - I have no frame of reference for taste as I won't actually taste authentic mici until I visit Romania (less than a month now!!). That said, according to the Romanian I knocked this recipe out the park.

#WeddingWednesday ~ How I asked my Bridesmaids

So I never actually thought I'd be the blogger who posts multiple posts about her wedding. And in many ways, I'm not. I already mentioned that I'm not the biggest fan of wedding planning, so I won't be posting these every week. That said, when there is something that I'm excited about I'll post it because I do want to remember the little things as time goes on. And so here I am. 

I was ridiculously excited to ask my best girls to stand with me on my big day and for some reason, felt really emotional about it. Really emotional - at least for me.

Now, this post should really be entitled how I asked my bridesmaids on a budget. Danny and I have some big expenses in the next - a trip to Romania this winter, another trip to Romania around May  next year (a month after our wedding) for his cousin's wedding, possibly a trip to Australia next year, maybe a house purchase ... and of course the wedding, which will be held at a hotel. You get the point... we are on a budget. But I did my best, working within our allotted funds for this, to give my girls a sweet gift in asking them to basically wait on my hand and foot for a day. #ikid

Eating (and drinking) on a budget while traveling


Thanks for all the love on my last post! I don't stay 'down' for long and was in good spirits soon after I wrote it. Thankfully. I did however have tons of work last week and decided to take the week off to focus on that. Also, I officially asked my bridesmaids to stand with me on my big day in April and Im sharing how I asked them on Wednesday - stay tuned. Anyway on to today's post.

If you've spoken to me for more than a minute then you know I love to travel. As much as I love to travel though, I will be the first to admit that travelling can get pretty expensive since things add up quickly. My budget brain tries its best to find ways to got costs and I've found that cutting costs on food and drinks can majorly affect the travel budget - in a good way. Coming off of the last two trips I took (Guyana and Barbados), and with my trip to Romania and Germany coming up in a just over a month (we leave on the 16th December) I decided it was time to share some of my tips and tricks for eating and drinking for less.

Most of these are no brainers, but I've found that employing at least some of these really helps.

Weekend Snapshots ~ Vol. 4

I had a travel post scheduled for today, but whenever I actually whip out my camera (or phone) and take photos over the weekend, I feel compelled to share them. So here we are.

These are the snapshots of my weekend:

1. Global Shapers #Heart4Climate

There's a lot I do in my 'real life' that I keep off the blog. Mainly work stuff and my involvement in charities or international organisations. This one was pretty cool though, so I thought I'd share it. An international organization that I'm involved in (its called Global Shapers - there's one in almost every country - and in the US, every state. You can google it and if you wish, contact your local hub; its an amazing organization) ran a Climathon this weekend in light of how badly the Caribbean has been affected by hurricanes in the last couple months. We collected non-perishable items as well as seeds and other agricultural items to help the affected islands and countries regroup and regrow. Our hub along with hubs in some other countries, formed human hearts as we stood in worldwide solidarity for our planet and doing what we can to make a difference. The French Ambassador attended and such made a great speech - it was just an amazing Saturday morning. This isn't the official drone photo of the heart - this was taken with a 360 cam but I quite like it so I posted this one :). (that was a longer paragraph than probably necessary.)

If you followed me on Twitter (you should), you'd know that for the last two weeks or so, I've been nursing the worst bronchial infection. I'm not even sure how it came about, all I know is that last week for the first time in my working life, I took two consecutive sick days. It was brutal. I'd say I'm about 90% good at the moment, aside from the fact that I sound like a pubescent boy.

Reading lately


I've been on a reading kick for the past few months, but I'm so bad at logging my reads as I should. My goodreads page is basically a deadzone and in no way reflects my reading status. That said, this particular month I didn't read that much, and honestly, Im not even sure the ones I read are worth sharing, but Ive made the decision to share whatever I read from now on, so share I shall.

As you'll see, a lot of these books were lighter reads. My reading taste absolutely depends on my mood, always has. When I have a rough work month like the past month was for me, I tend to read lighter, happier, not-too-much-thought books since my very job involves lots of reading heavy legal material daily.

Weekend Snapshots ~ Vol. 3

Well, just like that, it's October.

This year man, its flying by. As weekends go, this one was pretty low key. I had tons of work to do so the other stuff kinda just filtered in around that. Still, I did take a few pictures for once so I thought I'd share them:
1. Lunching
Technically, this wasn't a weekend thing, unless you count Friday as the weekend. On Friday after a full morning and early afternoon in Court I stole away for a two hour 'lunch' with a co-worker and a former co-worker. We had wine. We ate. It was a good time. Last week was a rough work week, but its amazing how a little wine and a little weekend can make you forget the woes and recharge.

I'd say abut ninety-five percent of my birthday trip to Barbados was spent at the beach (with that pink hat on my head). When in Rome. Now this isn't my first Barbados rodeo. I've been to Barbados several times before, and even lived there, for two years, eight to ten years ago. Needless to say, I not only know the ins and outs of the island, but I know which beaches are the best.

An overview of my trip to Barbados


I took the photo above from the back balcony / beach exit of our hotel in Barbados. It pretty much sums up the trip - Serene perfection. I love Barbados and spending my birthday there was pretty sweet. Honestly this may be the best birthday I've had yet.

This trip was a complete contrast to my trip to Guyana a few weeks prior. I enjoyed both of course, but they are very different countries. I thought I'd give an overview of our entire trip today, but expect Barbados overload in the next couple weeks. Hey, I took a lot of photos and they must be shared. As with all my travel posts, this is photo heavy.

My weekend was pretty uneventful as weekends go. Apart from a quick Starbucks run Saturday night (where I didn't even drink coffee), it was spent fixing house and chilling with the parents. Normal, fun, heart filling, but nothing to review really. And my week so far? One word - busy, and not in a bad way, just a busy way.

Anyway, I love date night. Danny and I have made it a priority to go on dates as often as possible. Now that the cat's out the bag, I can confirm that we are planning a wedding and I'm quick learning that the rumours are true, those things aren't cheap. That means, date night is not fine dining every weekend anymore (was it ever? I like being cheap thank you). That photo up there is not my living room, but I feel like its giving off the same vibe as my apartment. From the moment we found this place, I went shopping, and by shopping I mean, I went on Amazon. I'll admit, it was kind of intimidating going from a one bedroom apartment to a two bedroom with more than twice the square footage, and the consequence was me manically adding all the things to my cart. Moving sucks and other life updates


The last time I checked in, I was on my way to Barbados for an epic birthday weekend. I think we can all agree from the above photo that a weekend in paradise is simply the best kind of weekend. It was an awesome trip and I have so much to tell you about it. Barbados updates coming in force. PS, have I mentioned that I love Barbados. 

I'll be honest, its hard for me to look at that photo without thinking about how quickly paradise can be destroyed. While Barbados, my island and many other more southern Caribbean islands were spared from the wrath of Irma, many of our brothers and sister up the isles have been affected, with very little (international) news coverage of just how bad the destruction really was. It honestly pains me. Caribbean people are resilient though, and we shall rebuild.

BARBADOS!!

Saturday is my birthday, and today i'm heading off to spend the entire weekend at one of my favourite places on the entire planet - Barbados. I lived in Barbados for two years in my early twenties and it truly is my second home. I try my very best to visit every year. I am absolutely enamoured with the country, everything about it. Its my dream to own a vacation home there at some point but, for now, yearly visits will do.

And we're back to recapping my Guyana trip. In my last Guyana post, I shared my thoughts about the trip in a very general way. This time, I thought I'd show some specific sites that I visited on the trip.

I'll warn you now, this post is incredibly long and photo heavy, but I didn't want to leave anything out and it just didn't feel right to split up the post. The reason? I raved about this place in my last post and I'm still raving about it today. When I talk about my trip to Guyana with my friends, this is the place that stands out the most and this is where I recommend everyone goes. Don't be fooled, its not your typical winery or retreat though. Its a natural living place where food is served in calabash bowls, the wine is made from Caribbean fruit and the accommodation? How I maintain my clear skin

I've said it before and will say it again, I love my skin and take good care of it. I've never had any acne issues and don't particularly have problematic skin, but I do know that some part of that is attributed to my skin care habits, since when they lapse, and I'm human so from time to time they do, my skin shows it. 

Since I crossed the 3-0 mark in age a couple years ago, I've become that much more obsessed with taking care of my skin. I've been blessed with good genes (my parents both have great skin) but I still do what I can to fight off the aging process or at least delay the inevitable. So far so good.

My trip to Guyana

Oh Guyana, What an adventure.

As I already said in this post, I was a little skeptical about visiting Guyana. It was never on my list of places to go and having heard some not so pleasant things from people who visited over the years, I just didn't feel it. In fact, had it not been for Danny being there for work, I probably would never have seen it. But I'm so so glad that I went, and would even recommend that people visit, if they have an open mind about the world around them, and know that no two lands are the same.

A little backstory about Guyana. It's the only English speaking country in South America but is also a part of the Caribbean Community (CARICOM). So technically its considered to be both in South America and the Caribbean. While its a large country (by Caribbean standards), only a small portion of it is developed and inhabited i.e lots of forestry to go around. Still, its a country rich in resources (gold and oil mainly) even though a large portion of its population live below the poverty line.

Coffee Chats ~ Vol. 2


If we were having coffee, I'd probably order a really strong one since its my first day back out to work in two weeks. I'd tell you that those two weeks off from work were glorious, a well needed rest as it was the first real vacation I've taken in two years. Last year, I only took 5 days off work and my brain was just about burnt out. This little break was welcome and enjoyed. Vacations are good for your mental health people. Take them.

I'd tell you that one of my favourite perks of this vacation was having time for people I love. Yesterday I ran errands and had lunch with my mum for the first time in a long time, and its these little things that make my heart smile. I mean, day drinking wine and having dessert with lunch should be mandatory for vacation days no? Just look at this deliciousness:

So, in the last year or so my makeup and beauty collection has grown. I jumped on the makeup train later than most so my makeup collection is still not massive by any stretch of the imagination (and likely never will be), but it has grown. I tend to mix up higher end brands with drugstore brands because well, sometimes they do the same job and why pay more when I can get the same thing for less. Planning for a trip to a new Country

Today marks the first day of  some much needed time off for me. I actually haven't taken any real time off from work in a year. I need it. Even more exciting, on Thursday I'll be heading to Guyana for a few days to meet up with Danny. 

I've never been to Guyana and had no real plans to ever visit before a few weeks ago. I also don't know anyone (currently) living there. That means that its not just a new country (and continent - South America) for me to visit but I'll have no one acting as tour guide. It's kinda like my trip to India a few years back, where I knew no one and created so many tragically comical (and some great) memories, except, its not nearly as far away (its a one hour and ten minute flight from here) and ill be able to speak the language ha!

Recipe ~ Sausage and Spinach Egg Muffins

I swear I'm not becoming a food blogger. I've just been motivated to cook a lot lately (read: my fat butt needs to lose weight and cooking my own food is the only way to prevent me from eating junk).

Anyway, I typically drink a protein shake in the morning for breakfast, but let me tell you, that gets old fast. I made these yummy sausage and spinach egg muffins this weekend so I could have an easy (and healthy) breakfast as an alternative to the drag of daily protein shakes. They turned out so good, I just had to post. The recipe couldn't be easier. Im serious. It takes 30 minutes to prep and cook.

Caribbean Life ~ Maracas Beach Day

A couple weekends back I went to the Maracas beach - the nicest beach in my island - and took some photos that I just had to share. It's a beautiful beach surrounded by mountains. The coastline is long and on any given weekend, the entire stretch of the beach is filled with people, energy and ... life.

Living in the Caribbean, you would think I go to the beach often, well, to be honest thats not exactly the case. Or it wasn't the case anyway. First of all, this beach is a forty-five minute drive (give or take) from my home. Secondly, I was just not much of a beach person. And so for many years, months and months would go by before I even saw the beach. 

Recently, I've been going a lot more. Truthfully, we can chalk that up to the fact that my Romanian boyfriend, being not from the Caribbean, is still fascinated by beach life (... and is ridiculously tanned/burnt as a result).

How I set up my Kikki K Planner

It's been a while since I've posted a planner setup on the blog, and I may be seven months late in posting this one, but, here it is. This is the planner that I've been using since the beginning of the year. It's no secret that I love organisation and planning and keeping things together. I also love pretty things and so, even though Im an attorney, I carry a bright pink planner around with me. #noshame

Full disclosure, I took these photos in the last week of December and fully intended to post them in January. Clearly that didn't happen. But since not much has changed in my planner and I use it every single day, I figured I could still post it. 

I've experimented with different planners in the past, like the Erin Condren life planner, but found that I'm way more comfortable (at least right now) with a ring bound planner that I could set up just the way I want - I use every single section that you will see below. Sidenote: The planner that I currently use is the Kikki K medium pink lavender planner. It was bought in December and is no longer available but there are several other options available on their site. I also own a black Kikki K and used that for much of last year. Anyway check out how I set this baby up. Lengthy post ahead....

On Finding Motivation


So, Im writing this post at way too late o'clock at night. By that I mean, by the time I hit publish, it will be a new day. But having just completed all the tasks that I had set out for the day - and the week thus far for that matter - I just had to sit and get my thoughts out, because its a good feeling to finally be able get stuff done again.

For the last couple weeks (or months - who's counting), I seemed to have lost my motivation mojo. Literally, the little motivating angel on my shoulder took a plane and went on a dang vacation. I may have bought his ticket too. I'm usually fairly (read: really) organised with my time, and I guess I still was, but I just didn't have the motivation or drive to do the 'extra'. Work was fine, love life - fine, family time - fine, the cat - way more than fine, but things like gym, eating healthy, cooking, meal prepping, keeping up with cleaning, reading, well they kinda just stopped. Guys, when I don't work out and don't have motivation to exercise and eat well, my mood takes a deep sea dive.

Weekend Snapshots ~ Vol 2

I used to be one of those people who sat home and did nothing on the weekend, by choice, and now I find myself having too much to do. Seasons of life I guess. This weekend was busy, but not in a non-relaxing way - none of the things I did took too much energy out of me, it was just a lot of things packed in. As weekends go though, it was a good one.

I actually can't believe its Friday already. This week flew by. It was an up and down week if I'm honest. The bf left on Wednesday for a work trip - he'll be gone for a few weeks and I can't say I'm too happy about it. I was already anticipating him leaving so while sad, I was ok, but then in the first half of this week, my mum's sister from NYC passed away (she'd been ailing for some time). Bummer. My mum left for NYC last night for the funeral and while I truly believe my aunt is in a better place, and not in any more pain - thats still just a lot of 'leavings' for one week. 

In spite of all of that, there was some good, so lets get to it.

10 Podcasts I'm Currently Obsessed With


So, I'm currently obsessed with Podcasts, and listen to them all the time. All the time. My commute to work in traffic is 1.5 hours both ways (yes I spend half my life in traffic on a tiny Caribbean island - the irony is not lost on me). I also listen at the gym, when running (even though I haven't run in some time), when cleaning, at the beach and sometimes even in my office with the door closed. Soooo, I thought I'd share some of my favourite podcasts, in all the genres and hopefully you find some good recommendations in here. Let's be honest though, these are by no means all the podcasts I have or currently do listen to - its obsessive over here, but these are some of my faves.

So, I've decided to start to share my weekend mainly in photos - few words. I was never any good at writing weekend posts, but sharing photos? Well, thats easier since I love them and I'm really trying to work on my photography skills, which I only get to do on the weekend (lets just ignore the fact that most of these pics are taken with my iPhone). An uptake of these posts (for me)? Ill actually remember what I did on weekends - seriously ask me what i did last weekend and I couldn't tell you. I'll say this though, since 'writing' this post, I realised that my weekends consist of lots of food - lots.  Heads up - this weekend I did a lot so post is photo heavy (understatement).

Coffee Chats ~ Vol 1.

It's no secret that coffee is my love language - ask anyone around me. In my absence, I noticed these posts all over blogland (See: AmberAlyssa and Olya), and I thought I could borrow the idea as an easy way to update on life's happenings. I hope that's ok. Linking up with Kristen and Gretch.

If we were having coffee I'd first tell you well, how I like my coffee. I like it black, one sugar, no milk. When I'm feeling for a coffee treat, I 'll have a Starbucks frappe - whatever kind I feel for on that day. But since I'm not a milk drinker by nature, thats a 3 times a year kinda deal. So today, its black for me. How do you have yours? I don't judge, we'll order whatever you like.

Recipe ~ Baked Bacon & Cheese Hot Dogs

Hi guys, my weekend was pretty amazing and wild (see - stayed out till 4 am on Friday night :/), and as such weekends go, I barely took any photos.

Well, except for these hot dogs I made yesterday ... one of the highlights of my weekend.

Lets go back a bit. Last week I made some amazing bacon and cheese 'hot-dogs' and decided to re-create them yesterday, except this time I whipped out the fancy cam and took photos since they were too yummy not to share. In the past when I've posted recipes, I waxed poetic about the fact that I don't always look at recipes of cook books and kinda just wing it. The same rings true to this recipe. It was created out of hunger, but is absolutely delicious. As its the 4th July weekend in the U.S. I thought I'd share it with the blog. Doesn't that look yummy?

It's Friday! It was a short week here, with last Monday being a public holiday for me. Guess what though, I made the week shorter by taking today off (for good reason and much needed). Y'all, I'm pretty excited for the weekend. For once, I brought no work home and my plans are to clean the apartment, maybe have a drink or two, shop a tiny bit and generally just ... relax. Enough rambling, on to my favourite things for the week...

8 things I wish I knew before getting a cat

So, like I said in my last post, I got a kitten. That's Chanel up there at about 8 weeks old - isn't she the cutest?

When I got her, she was just 6 weeks old and now, she's just over three months. Anyone who has been around me for more than 5 minutes since I've had her, has heard me obsess about my kitten. Y'all, I went from a self professed "I'm a dog person" to crazy cat lady in 2.5 seconds.

That said, I had absolutely no idea how to raise a cat before I got her. I grew up with dogs - not cats. Call me crazy but I like to be prepared and while I really wanted a cat, I knew I was not prepared to own one, so naturally, I did tons of research before actually picking Chanel up (I literally read 500 articles and watched 2 million YouTube videos - nothing too crazy). Nothing I read or watched could prepare me for the crazy that was and is cat town. It's a good crazy,  but there are just things I wish I knew about life with a cat.

Well hello there ...

They say time flies when you're having fun - and it certainly does. While I've kept up with my blog reading (and with a few sporadic comments here and there), the fact is that I had, for a period, given up on this space on the internet. I blogged 22 times in 2016 and only once for this year...

Cheers to a New Year ~ What 2016 taught me!


Anyone there? I won't be surprised if no one is.... it's been a minute (and a half) since I showed up to my little space on the interwebs, and boy has life been a roller coaster (understatement) since then.

For a lot of people 2016 has been a challenging year. I guess every year is challenging, but I'm with those folks who could not wait to see (and kiss) the backside of 2016. Not even kidding.
