Recipe ~ Sausage and Spinach Egg Muffins

I swear I’m not becoming a food blogger. I’ve just been motivated to cook a lot lately (read: my fat butt needs to lose weight and cooking my own food is the only way to prevent me from eating junk).
Anyway, I typically drink a protein shake in the morning for breakfast, but let me tell you, that gets old fast. I made these yummy sausage and spinach egg muffins this weekend so I could have an easy (and healthy) breakfast as an alternative to the drag of daily protein shakes. They turned out so good, I just had to post. The recipe couldn’t be easier. Im serious. It takes 30 minutes to prep and cook.

* * Recipe makes 6 muffins

What you need (not many ingredients):

6 eggs

1 whole onion (or 1/2 – I love onions so I used a lot)

1 bell pepper

2 sausages of choice

1/2 cup cheddar cheese

Handful of spinach

A pinch of salt

1 muffin tin

 

What you do:

1.Preheat oven to 290 degrees

2.     Dice onions, sausages and bell pepper

3.In a large bowl, beat all 6 eggs

4.Combine cheese, spinach and chopped ingredients with eggs

5.     Pour mixture into muffin tins

8.Bake for 20 minutes or cooked through

I’ve seen similar recipes on the inter webs but none with the specific ingredients I used. By all means, put anything you want into this.
